Job SummaryResponsible for setting up, preparing, and cooking all breakfast food items to the chefs specifications while ensuring food quality, cleanliness, and efficient operation of the breakfast service line. Supports the culinary team by following recipes, managing prep lists, and maintaining food safety and sanitation standards.

Essential Duties and Responsibilities

  • Prepare and cook all breakfast menu items including eggs, meats, sides, and baked goods to hotel and chef standards.

  • Follow standardized recipes and portion guidelines, ensuring quality and consistency in every plate.

  • Maintain detailed prep lists and par levels for shift readiness, properly labeling and storing all ingredients.

  • Ensure proper storage, rotation, and labeling of all perishables to maintain freshness and minimize waste.

  • Operate kitchen equipment such as griddles, ovens, steamers, slicers, and mixers safely and effectively.

  • Clean and sanitize all workstations, tools, and equipment throughout the shift and at end of service.

  • Monitor and log food temperatures, heating/cooling logs, and take corrective action when needed.

  • Assist with special prep or banquet support, as needed.

  • Alert the chef or supervisor to equipment malfunctions, low stock, or food quality concerns.

  • Follow hotel and health department guidelines for food safety, sanitation, and hygiene.

  • Maintain a neat, clean, and well-groomed appearance at all times.

  • Turn in any lost and found items and assist other kitchen staff as necessary.

  • Perform any other duties assigned by management.

Knowledge, Skills & Abilities

  • Minimum one (1) year of food service or line cook experience required; breakfast cooking experience preferred.

  • Valid Food Handlers Card required.

  • Strong understanding of broiler and saut cooking fundamentals, food handling standards, and breakfast preparation techniques.

  • Familiarity with kitchen sanitation standards and safe use of cleaning chemicals.

  • Ability to read and follow recipes, use basic math to calculate measurements and portion sizes.

  • Ability to effectively communicate in basic English and follow verbal and written instructions.

  • Ability to operate all standard kitchen equipment and tools.

Physical Demands

  • Stand and walk for extended periods; full mobility and manual dexterity required.

  • Lift, carry, push, or pull items weighing up to 40 pounds regularly, and up to 100 pounds with assistance.

  • Perform duties in hot, cold, or confined kitchen environments.

  • Frequent bending, twisting, stooping, reaching, grasping, and moving throughout the kitchen.

  • Ability to work early morning hours and remain alert and focused in a fast-paced setting.
